Hummus Among Us

Due to the 12 week restrictive diet, Jacob and I have had to forgo dining out … which has been helping our budget (always look on the bright side!). One thing we missed was hummus from our favorite Mediterranean place – Aladdin’s. While we cannot have falafels, we can certainly substitute chips! However, come to find out, most (if not all) recipes use soybean oil, which Jacob cannot have for 12 weeks.

Determined to overcome this minor obstacle, I created my own hummus – with spectacular results! I didn’t measure things out – you just have to go with your own taste on this one.

1/2 can of chick peas (garbanzo beans)
Approximately 2-3 Tbs Tahini (sesame seed paste)
3 garlic cloves
Salt, to taste
Canola oil, to smooth texture
Paprika (garnish)

Place all ingredients in a food processor and blend away! Add enough oil to get the right texture. This recipe is excellent with chips, celery, and carrots – or any other vegetable!
