While Mandarin chicken salad may be flavored with Asian spices, it is primarily a western meal.
Grill the chicken breast in oil and ginger until done. Let cool. Once cool enough to handle, slice chicken breast into strips/chunks. Combine all ingredients. I like to use Newman’s Own Poppy Seed dressing for this salad – or just use the left over orange juice.
