Bountiful Salads – Mandarin Chicken Salad

While Mandarin chicken salad may be flavored with Asian spices, it is primarily a western meal.

Mandarin Chicken Salad
Handful of lettuce
Red onion, chopped coarsely
Cashews
1 antibiotic free chicken breast
1 can mandarin oranges in juice
Canola oil
Ground ginger, if desired

Grill the chicken breast in oil and ginger until done. Let cool. Once cool enough to handle, slice chicken breast into strips/chunks. Combine all ingredients. I like to use Newman’s Own Poppy Seed dressing for this salad – or just use the left over orange juice.

慢慢吃! (mànmàn chī! – Mandarin Chinese for Bon appétit)
