Pork Chops with a Cherry Glaze

This delightful combination is easy enough to make any time of the year. It goes well with most vegetables – we had it with green beans and sweet potato fries.

Pork chops with cherry glaze
2 Tbs olive oil
4 (4oz) pork chops
Salt & pepper
1 small onion, thinly sliced
1 Tbs brown sugar
1/4 cup apple juice
1 Tbs vinegar
1 cup pitted, halved cherries

Heat 1 tablespoon oil in large skillet on medium-high heat. Season pork with salt & pepper. Cook chops for 6 minutes. Turn and cook an additional 6 minutes. Remove from skillet and keep warm. Add remaining oil to skillet. Add onions. Cook and stir onions until soft, about 5 minutes. Reduce heat to low. Stir in sugar. Cook and stir, until onions are caramelized and tender, about 5 minutes. Stir in apple juice, vinegar, and cherries (I added a little amaretto for some extra-special flavor). Bring to a boil, stirring constantly. Return pork chops and any accumulated juices to the skillet.

Serve and enjoy!

P.S. This also works well with apples. Just substitute the halved cherries with apples. Boil until soft.
