Oven-Baked Macaroni & Cheese

Two aspects of this macaroni and cheese set it apart from others. First, smokey-flavor Gouda cheese adds depth of flavor. Second, skim milk, less butter and reduced-fat cheese cut down on the fat content.

 

Oven-Baked Mac n’ Cheese – Serves 4
2 cups GF macaroni
1 Tbs unsalted butter
1/2 small onion, minced
1 garlic clove, minced
2 Tbs GF all purpose flour
2 cups skim milk
1 tsp ground mustard
Salt & pepper, to taste
3/4 cup shredded cheddar cheese
1/4 cup shredded Monterey jack cheese
1/4 cup shredded smoked Gouda cheese (purchase a block and shred at home)
Paprika

 

Heat oven to 350. Coat a 2-quart baking dish (or individual baking dishes) with nonstick cooking spray; set aside.

Prepare pasta according to package directions. Drain, set aside and keep warm. Meanwhile, while the pasta is cooking, melt butter over medium heat in a saucepan. Add onions and garlic; cook about 1 minute. Add flour and cook 1 minute more, stirring constantly. Gradually whisk in milk and ground mustard until blended. Season with salt and pepper. Bring to boiling. Cook about 2 minutes, until thickened. Stir in cheese until melted.

Remove from heat and add cooked macaroni. Pour into prepared dish(es). Sprinkle with paprika. Bake for 15 minutes or until golden and bubbly.
