Mashed Potatoes & Chicken Noodles

For me, this recipe is sheer comfort food. My mom would make this on cold winter nights. It’s simple, easy, cheap, yet filling! Enjoy.

 

Mashed Potatoes & Chicken NoodlesServes 2
Box of instant mashed potatoes
Milk
Butter
Salt & pepper
GF noodles (I use spirals)
10 oz. can of chicken
3 cubes chicken bouillon
2 tsp sage
2 tsp thyme
2 tsp oregano
2 tsp parsley

 

Prepare mashed potatoes according to package directions. Set aside. Prepare pasta according to package directions with a few alterations – in the pasta water, add 3 cubes of chicken bouillion. While pasta is cooking, open can of chicken, chop (if necessary) and place in bottom of a strainer. When the pasta is done, drain; pouring over chicken. Reserve some of the broth. Place chicken and noodles back into saucepan. Add some broth into the pan and add 1 Tbs butter. Sprinkle spices/herbs and stir well.

Serve in a bowl with mashed potatoes on bottom and chicken noodles on top. Add broth, as desired.
