Rosemary Lemon Garlic Chicken

Sunday evening, we invited 6 friends (3 other couples) to our house for dinner. It had been some time before we had all been together and talked. I prepared the main entree, bread and dessert. The other guests brought appetizers, vegetables, and drinks.


1/3 cup roasted garlic flavored oil*
Zest and juice of 1 medium lemon
1 tsp dried rosemary leaves
1/4 tsp red pepper flakes
1/2 tsp salt
1 lb boneless, skinless chicken breasts


In small bowl, whisk together oil, lemon juice and zest, rosemary, red pepper flakes and salt. Pour over chicken; marinate for 1 hour (or more) in the refrigerator. Grill over medium heat for 6-8 minutes on each side, or until done.


* I made my own garlic-infused oil. I just placed 1 cup of olive oil in a sealable glass jar and added crushed garlic cloves, rosemary, and fresh-cracked pepper. Let it sit at room temperature and mix on occasion over the course of a week before using.
