Flour Mixes

Many of the recipes I have use different combinations of flours.  Here are the recipes for all of them.

Gluten Free Flour Mix (called GF Mix in recipes):
6 cups rice flour
2 cups potato starch
1 cup tapioca flour

Featherlight Rice Flour Mix (called Featherlight Mix in recipes):
3 cups rice flour
3 cups tapioca flour
3 cups cornstarch
3 Tbs potato flour (NOT STARCH)

Light Bean Flour Mix (for breads only):
3 cups Garfava bean flour*
3 cups tapioca flour
3 cups cornstarch

Four Flour Bean Mix (called Four Flour mix in recipes):
2 cups Garfava bean flour*
1 cup sorghum flour
3 cups tapioca flour
3 cups cornstarch

*Garfava flour is available from Authentic Foods.

Preparing these flours is pretty easy, but messy. I usually pour the contents of each type of flour into a 1 gallon Ziplock bag. It allows easy measuring – just be sure to label the bag contents! I combine all of the flours into a big bowl and whisk them together. Then I transfer the mixture into a vacuum sealed, 10 cup container. All four containers are labeled accordingly. That way, when a recipe calls for a mixture, I just grab the container and continue my work! Most of the flours can be purchased at a health foods or natural foods store.
