Chicken Stir Fry with Pad Thai Noodles

My husband and I thoroughly love stir fries! There are so much variation you can do … they are never the same each time.  This week, we had a chicken stir fry with pad thai (rice) noodles.

Number of chicken breasts per person (two people dining = 2 chicken breasts)
Sesame oil
Sesame seeds
Water chestnuts
Bell pepper (color of your choice)
Garlic (dried spice is fine)
Ginger powder
Coconut, optional
Peanuts, optional
Pad Thai

In a wok or large skillet, pour some sesame oil (or regular oil, if you prefer). Heat. Add in diced chicken breasts and cook until white. Add in sesame seeds and water chestnuts until brown. While browning, chop bell pepper and onion. Add these, minced garlic, and ginger powder in to the skillet. Heat thoroughly.

Prepare the pad thai according to package directions.

Serve over pad thai noodles (found in Asian sections of supermarkets). We like to “dress up” our stir fry with coconut and/or peanuts.

With this recipe, I do not include specific amounts of the ingredients. It is mostly based on preference, but also on how many you are feeding. Experiment and enjoy!
