I had breakfast … a bagel sandwich! I scrambled two eggs and toasted an Udi’s plain bagel, which I found was better than their bread (IMHO). Once the bagel was toasted, I put sliced mozzarella cheese on (it melted deliciously … and we’re out of cream cheese). Over the cheese, I put three slices of smoked turkey breast and then the scrambled eggs. Yummy!!
Dinner was a new experiment, again. Hubby had leftover pasta (from last week when I could still eat that stuff). I decided to make Annie’s gluten free rice pasta and cheddar cheese. It was remarkably good. The sauce was a little thin. I added some butter. I ended up eating the whole box (which wasn’t much), but think of it this way … it has 100 less calories than traditional, wheat macaroni and cheese! Bonus!
